How to make Chicken Keema Masala (Step by Step) ?

Ingredients :

1kg – Chicken Minced
1 tsp – Cumin Seeds
2 – Dry Red Chilies
1 – Large Onion (Finely Chopped)
1 inch – Fresh Ginger, (Finely Chopped)
4 pods – Fresh Garlics (Minced)
5 – Green Chilies (Finely Chopped)
1/2 tsp – Turmeric Powder
1/2 tsp – Garam Masala
2 tsp – Coriander Powder
1 tsp – Cumin Powder
1/2 tsp – Red Chili Powder
3 – Medium Tomatoes (Chopped)
1 tsp – Kasuri Methi
2 tbsp – Coriander Leaves (For Garnish)
1/2 cup – Frozen Peas
1 tbsp – Card or Sour Cream
3 tbsp – Oil
3/4 cup – Water

Step 1 : Cook the Chicken Minced
Heat oil in a non-stick pan. Add cumin seeds and the crushed dry red chilies. When the seeds begin to sizzle, add the Chicken Minced. Cook until the chicken is evenly browned.

Step 2 : Cook along with Spice
Heat oil in a pan and add the chopped onion. Cook until the onion begins to turn brown. Add garlic and ginger. Cook for 2 minutes and then add chopped tomatoes. Also, add turmeric, red chili, cumin and coriander powders, and mix. Cook until the tomatoes are cooked and the oil separates. Now add browned Chicken Minced. Cook till the chicken and tomato have mixed together (about 15 minutes) stirring frequently.

Step 3 : Cook along with Methi & Peas
Add salt, curd, water, and kasuri methi. Boil, then cover, reduce heat and let simmer for 10 min. Add the peas and garam masala powder, and cook for another 10 min. Serve garnished with chopped coriander leaves and sliced boiled eggs.

How to make the Pepper Chicken Fry (Step by Step) ?

Ingredients :

1.2 tbsp – Black Peppercorns (Crushed)
2 – Boneless Chicken Breasts (Small Cube)
1 tsp – Coriander Powder
0.5 tsp – Turmeric Powder
2 tsp – Red Chilli Powder
1 tbsp – Ginger Garlic Paste
3 tbsp – Rice Flour
1 tbsp – Coconut Oil
15 – Dried Coconut Slices
1 tsp – Mustard seeds
18 – Curry Leaves
1 – Lemon (Juice)
1 – Egg
Oil (for Deep-frying)

Step 1 : Preparing Spice Mix

Combine chicken pieces, salt, coriander powder, turmeric powder, 1 tsp red chilli powder, 1 tbsp crushed peppercorns and egg in a bowl and mix well. Then Finely chop 5-6 curry leaves and add alongwith lemon juice and mix well. Finally add ginger-garlic paste and rice flour and mix well.

Step 2 : Deep-fry the Chicken Pieces

Deep-fry chicken pieces till golden and crisp. Drain on absorbent paper.

Step 3 : Preparing Coconut Mix

Heat coconut oil in anon-stick pan. Add dried coconut slices and sauté till well browned and crisp. Add mustard seeds and let them splutter. Add remaining curry leaves, 2 tsps crushed peppercorns, little water and mix well. Then add salt, remaining red chilli powder and cook for a minute.

Step 4 : Final

Add fried chicken and toss to mix. Let it get heated through and Serve hot.
